Earlier this month, we took our butcher apprentices to the abattoir run by Dunbia in Sawley to see what happens before the meat comes to us for processing. It was a topic that was discussed during their apprentice class time, and they were tasked to write an essay about it. They were able to see the animals from the start to finish in the abattoir and learned how the animals are cared for beforehand. They also learned as to why things were done a certain way and how it would affect the animal. They all felt that they learned a lot and gained a deeper appreciation for meat.
