Chennai Inspired Lamb Burgers with Sweet tomato chutney, crispy onion bhaji and Bombay potatoes

Chennai Inspired Lamb Burger

Ingredients:

  • 4 Birtwistles Lamb Burger Patties
  • 4 burger buns
  • 200g tomatoes, chopped
  • 1 onion, finely chopped
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 200g onion bhaji (store-bought or homemade)
  • 400g baby potatoes
  • 1 tbsp curry powder
  • Fresh coriander, chopped

Instructions:

Heat a grill or skillet over medium heat. Cook the Birtwistles lamb burger patties for 4-5 minutes per side, until they are browned and cooked to your desired doneness. Toast the burger buns for a few minutes until golden.

In a saucepan, heat oil and add mustard seeds and cumin seeds until they sizzle. Add chopped tomatoes, onion, sugar, and vinegar. Cook on medium heat for 10 minutes until the chutney thickens. Set aside.

Boil the baby potatoes for 10-12 minutes, drain and let them cool slightly. In a frying pan, heat some oil and add curry powder. Toss the potatoes in the pan until coated and crispy.

Assemble the lamb burgers with sweet tomato chutney, crispy onion bhajis, and serve alongside Bombay potatoes. Garnish with fresh coriander.
