Greek Herb-Rubbed Chicken Fillets with Vegetable Couscous, Tzatziki, and Pitta Bread

Ingredients:

4 Birtwistles Chicken Fillets in Greek Herb Rub
1 cup couscous
1 1/4 cups water or chicken broth
1 cup mixed vegetables (e.g., bell peppers, zucchini, and cherry tomatoes), diced
1 tablespoon olive oil
4 pitta breads

For the Tzatziki:

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess water
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
Salt and pepper to taste

For the Vegetable Couscous:

1 cup couscous
1 1/4 cups water or chicken broth
1 tablespoon olive oil
1 cup mixed vegetables (e.g., bell peppers, zucchini, cherry tomatoes), diced
Salt and pepper to taste
1/4 cup chopped fresh parsley (optional)

Instructions:

Preheat your grill or grill pan to medium-high heat. Grill the Birtwistles Chicken Fillets in Greek Herb Rub according to the package instructions, typically about 4-5 minutes per side, until cooked through and with a nice char. The internal temperature should reach 165°F (75°C). Once cooked, let the chicken rest for a few minutes, then slice into strips.

In a medium saucepan, bring the water or chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes. Fluff the couscous with a fork and stir in 1 tablespoon of olive oil. In a separate pan, heat a little olive oil over medium heat and sauté the mixed vegetables until tender, about 5-7 minutes. Combine the sautéed vegetables with the couscous. Season with salt and pepper to taste. Stir in chopped fresh parsley if using.

Warm the pitta breads on the grill or in a toaster for 1-2 minutes until soft and pliable.

Arrange the sliced grilled chicken fillets on a serving tray. Place the vegetable couscous alongside the chicken on the tray. Serve with a bowl of Tzatziki for dipping. Cut the warmed pitta breads into halves or quarters for easy dipping and scooping.
