Ingredients:
4 Birtwistles Hot & Spicy Gourmet Burgers
8 slices streaky bacon
4 brioche buns
4 tablespoons chipotle mayo
Chilli pickles (store-bought or homemade)
For the Blue Cheese Slaw:
2 cups shredded cabbage
1/2 cup grated carrots
1/4 cup chopped green onions
1/2 cup crumbled blue cheese
1/4 cup mayonnaise
1 tablespoon apple cider vinegar
Salt and pepper to taste
Instructions:
To prepare the Blue Cheese slaw, in a large bowl, combine the shredded cabbage, grated carrots, and chopped green onions.
In a separate small bowl, mix the mayonnaise, apple cider vinegar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Gently fold in the crumbled blue cheese. Refrigerate until ready to use.
In a skillet over medium heat, cook the streaky bacon until crispy, about 5-7 minutes. Transfer the cooked bacon to a paper towel-lined plate to drain.
Preheat your grill or grill pan to medium-high heat. Grill the Birtwistles Hot & Spicy Gourmet Burgers according to the package instructions, typically about 4-5 minutes per side, until fully cooked
Lightly toast the brioche buns on the grill or in a toaster. To assemble the Burgers spread 1 tablespoon of chipotle mayo on the bottom half of each toasted brioche bun. Place the cooked Hot & Spicy Gourmet Burger on top of the chipotle mayo. Add two slices of crispy streaky bacon on top of each burger.
Top with a generous portion of blue cheese slaw. Add a few chilli pickles on top of the slaw. Finish with the top half of the brioche bun.
Serve the hot & spicy gourmet burgers immediately with additional chipotle mayo and chilli pickles on the side if desired.
