Pork Belly Squares in Maple & Chilli Rub with BBQ Corn, Creamy Slaw, and BBQ Potatoes

Ingredients:

Pork Belly Squares in Maple and Chilli Rub
For the BBQ Corn:
4 ears of corn, husked and cleaned
2 tablespoons olive oil
Salt and pepper to taste
Optional: 1/4 cup grated Parmesan cheese and chopped parsley for garnish

For the Creamy Slaw:

4 cups shredded cabbage (green and red)
1 cup shredded carrots
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste

For the BBQ Potatoes:

1.5 lbs baby potatoes, halved
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

Instructions:

Preheat your grill or oven to 375°F (190°C). Grill the pork belly squares over medium heat for 20-25 minutes, turning occasionally, until they are crispy and caramelized. Alternatively, bake them on a wire rack over a baking sheet in the oven for the same time, turning halfway through.

Brush the corn with olive oil and season with salt and pepper. Grill the corn over medium heat, turning occasionally, until charred and tender, about 10-15 minutes. Optional: Sprinkle with grated Parmesan cheese and chopped parsley before serving.

In a large bowl, combine shredded cabbage and shredded carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until ready to serve.
Toss the halved baby potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread the potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes, or until crispy and golden brown. You can also grill them in a grill basket, turning occasionally, for the same time.

Arrange the pork belly squares on a serving platter. Serve alongside the BBQ corn, creamy slaw, and BBQ potatoes.
