Provencal Toulouse Sausage Cassoulet

Ingredients:

For Provencal Grilled Toulouse Sausage:

4 Birtwistles Toulouse sausage rings

For White Bean and Smoked Bacon Cassoulet:

1 can (14 oz) white beans, drained and rinsed
4 slices smoked bacon, chopped
1 onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 teaspoon dried thyme
Salt and pepper to taste
Olive oil for cooking

For Tomato Fondue:

4 ripe tomatoes, diced
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil leaves for garnish (optional)

Instructions:

Preheat your grill or grill pan to medium-high heat.

Grill the Toulouse sausage rings until they are cooked through and have grill marks, about 8-10 minutes, turning occasionally.

While the sausages are grilling, prepare the white bean and smoked bacon cassoulet. In a skillet, cook chopped smoked bacon until crispy. Remove bacon from the skillet and set aside, leaving the bacon fat in the skillet.

In the same skillet with bacon fat, sauté chopped onion and minced garlic until softened. Add diced tomatoes (with their juices) and dried thyme. Stir in the drained and rinsed white beans. Cook for about 5-7 minutes, until the mixture is heated through and slightly thickened. Season with salt and pepper to taste.

While the cassoulet is simmering, prepare the tomato fondue. In another skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Add diced tomatoes and cook until softened and slightly saucy, about 5-7 minutes. Season with salt and pepper to taste.

Once everything is ready, serve the grilled Toulouse sausage rings on a platter, accompanied by the white bean and smoked bacon cassoulet and tomato fondue.

Garnish with fresh basil leaves if desired.
