Spanish Fusion Meatballs with Chorizo, Spicy Tomato Sauce, and Paella Rice

Ingredients:

1 pack of Birtwistles Spanish Fusion Meatballs with Chorizo
1 cup paella rice
2 tablespoons olive oil
1 small onion, finely chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon saffron threads (optional)
2 cups chicken broth
1 cup canned crushed tomatoes
1 teaspoon chili flakes (adjust to taste)
salt and pepper to taste
fresh parsley, chopped (for garnish)

Instructions:

Preheat your oven to 375°F (190°C).Place the Birtwistles Spanish Fusion Meatballs with Chorizo on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until cooked through. Set aside and keep warm.

While the meatballs are cooking, heat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and red bell pepper. Cook until softened, about 5 minutes.
Add the minced garlic, smoked paprika, and saffron threads (if using). Cook for another 1-2 minutes until fragrant. Add the paella rice to the pan, stirring to coat the rice in the oil and spices.
Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid. Remove from heat and let it rest, covered, for 5 minutes.

In a separate saucepan, heat 1 tablespoon of olive oil over medium heat. Add the canned crushed tomatoes, chili flakes, salt, and pepper. Stir to combine. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.

Spoon the paella rice into a serving bowl. Place the cooked Spanish Fusion Meatballs on top of the rice. Pour the spicy tomato sauce over the meatballs. Garnish with chopped fresh parsley.
Serve the Spanish Fusion Meatballs with Chorizo, spicy tomato sauce, and paella rice immediately.
