Traditional Cumberland Sausage Delight


For Tray-Baked Cumberland Sausage:

6 Traditional Cumberland sausages

For Balsamic Roasted Red Onions & Pepper:

2 red onions, sliced
2 bell peppers (any colour), sliced
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Salt and pepper to taste

For Honey Roasted Cornish Brie:

1 small wheel of Cornish Brie cheese
2 tablespoons honey

For Griddled Sourdough:

4 slices of sourdough bread
Olive oil for brushing

For Herb-Buttered New Potatoes:

1 pound new potatoes
2 tablespoons butter
1 tablespoon chopped fresh herbs (such as parsley, thyme, or rosemary)
Salt and pepper to taste


Preheat your oven to 400°F (200°C).

Place Cumberland sausages on a baking tray and bake in the preheated oven for about 20-25 minutes, or until cooked through and browned.

While the sausages are baking, prepare the balsamic roasted red onions & pepper. Toss sliced onions and bell peppers with balsamic vinegar, olive oil, salt, and pepper. Spread them out on a baking tray and roast in the oven for about 15-20 minutes, or until caramelised.

Drizzle honey over the Cornish Brie cheese and place it in the oven for the last 5 minutes of cooking, just until softened and slightly melted.

Heat a griddle pan or skillet over medium-high heat. Brush sourdough bread slices with olive oil and grill them on the griddle pan until toasted on both sides.

Meanwhile, cook new potatoes in boiling salted water until tender, about 15-20 minutes. Drain and toss with butter, chopped fresh herbs, salt, and pepper.

Once everything is cooked, arrange the tray-baked Cumberland sausages, balsamic roasted red onions & pepper, honey roasted Cornish Brie, griddled sourdough, and herb-buttered new potatoes on a large serving platter.

Serve hot and enjoy this traditional English meal!
